COOKIES!!!!
Saturday afternoon Annika begged and pleaded that she could make up her own cookie dough. Well, why not??? I just asked that she keep her batch small.
A little bit of flour, some sugar, vegetable oil, an egg, a little baking powder (or did you use baking soda???), a tiny bit of salt, some milk, a dash of vanilla extract and some colorful mix-ins….and there you have Annika's Cookies!!!!!
Annika used edible markers to write the initials of the people Annika wanted to give the cookies to- Ava, Mom (me), Dad, Annika, Marko, Juandre, Croydon and Debbie.
And guess what??? The cookies were good!!! Perhaps not very cookie-like- they were closer to scones – but honestly good. And I'm not just saying that because she's my daughter!!! Pretty darn amazing for just making up cookie dough!!!!!

I made some coconut shortbread cookies. We cut out different shapes with cutters- stars, trees and flowers. After the cookies cooled we- or the girls- decorated the cookies with very runny icing. Mmmmmmmm…..
Annika wanted to add mint extract to the green icing…which already had a little bit of almond extract in it. Amazingly – the cookies and the strange combos turned out just fine! (coconut cookies with either almond, mint or almond&lingonberry syrup flavorings!)

Ooof. And now I ate too many cookies!!!! Such a terrible problem to have, no???
What is your favorite cookie recipe??? I'm on the constant look-out for new cookies to try!!! 🙂
